The Snowpocalypse of 2014 has certainly engulfed Pine Plains this winter, but that hasn’t stopped the construction at Harvest Homestead Farm. We managed to get our barn up and weather-tight during the unseasonably mild autumn; now we’re hard at work behind thankfully closed doors to get our interiors all buttoned up as well! The latest plans for the barn interiors are still tucked away safely with Dutch Schultz’ hidden treasure, but we can reveal that the oak flooring is being crafted by our fellow Pine Plains’ neighbors at Hudson Co. The wood comes straight from the hundreds of acres of timberland on Harvest Homestead Farm!

Recent Events

We couldn’t have imagined a better way to celebrate the induction into New Jersey than to participate in Restore the Shore’s charity benefit on January 30th , sponsored by our friends at R&R Marketing. Celebrated mixologist Christopher James of the Ryland Inn created a divine selection of cocktails using products from R&R Marketing’s craft portfolio including…you guessed it… Sugar Wash Moonshine.

And just the night before Restore the Shore’s benefit, we were embracing the NY/NJ connection that was making pigskin history. Moonshine was freely flowing at Gotham City Hall for a two story blowout supporting all of the people who made Super Bowl XLVIII happen this year.

The fun didn’t end there though. After both events, we shot up to the beautiful and always inspiring Mohonk Mountain House in New Paltz to take part in their Locavore Weekend. A celebration of all things local, many of the state’s finest food suppliers, distilleries, and artisans were on site to sample their wares. Music, dancing, art, cooking demos and a panel discussion including esteemed local distillers Ralph Erenzo and Dave Pickerell were also on the menu for this incredible weekend.

On the evening of February 25th, we joined with some of New York’s finest chefs to help raise money at the Cookies for Kids’ Cancer annual gala. Cookies for Kids’ Cancer is a charity very dear to our hearts, which has been raising millions of dollars to fund research for pediatric cancer. We were very honored to take part in the special evening.

Upcoming Events

This coming weekend we will take part in The New York Times Travel Show. Thousands of travel-hungry visitors will descend on The Jacob Javits Center to explore exciting new destinations both near and far. We are delighted to oblige by offering a peek of Dutch’s Spirits at Harvest Homestead Farm opening to the public in Fall 2014! Tickets are still available.

Edible Manhattan Magazine will be hosting its 4th Annual Good Spirits event on March 20th (postponed from an earlier date of February 13th). The event pairs distinguished spirits brands with locally celebrated restaurants for a truly delightful culinary experience. We are very happy to be teaming up again with the deliciously blessed folks from Prospect Restaurant.

Well Isn’t That Just Peachy!

Well, we don’t know about you, but the moment we have been eagerly awaiting has finally arrived. The second batch of Dutch’s Peach Brandy is complete. Made 100% from New York State peaches, we believe this batch to be the finest yet. Ok, so it’s only the second batch, but trust us! A few tweaks in the process, and the results are truly something to be tasted—and we think well deserving of the new makeover…

Cocktail Highlights

The possibilities seem endless with the Sugar Wash Moonshine, and bartenders and mixologists from around the state continue to blow us away with their creations. Take a look at what Good Luck in Rochester, NY and Almond in NYC is serving up this winter. Try these at home…or…not.

Hot Shakalaka
Created by Chuck Cerankosky, Good Luck, Rochester, NY

Rum-soaked cranberries
1 oz. Smoked-Coconut-Washed-Dutch’s Sugar Wash Moonshine
1 oz. Old Grand Dad Bourbon
1 oz. Barenjager
¼ oz. Broadbent 5 yr. Madeira
Piping hot water
Mint Leaf

Combine all spirits in a hearty, stemmed glass. Top with the hot water. Slap the mint leaf and float on the surface.

Smoked Coconut Sugar Shine:
Pour 3 cans of coconut milk in a half-hotel pan. Put in a smoker for 1 hour. In a large freezer-safe container, add the coconut milk to two 750-ml bottles of Dutch’s Sugar Wash Moonshine. Freeze for 24 hours. Skim any coconut fat solids from the surface, and strain the remaining liquid through a cheesecloth or super-bag. Store in glass bottles.

Warm Hibiscus Punch

Combine the following ingredients in percolator and let simmer:
(serves 40 cups)

30 cups Tea
10 cups Dutch’s Sugar Wash Moonshine
6 Lemons
3 oz. Simple syrup
8 quarts Water
6 oz. Hibiscus flower
12 Cinnamon sticks
5 Orange peels
2 Grapefruit peels
20 Cloves
20 Allspice
10 Star anise
6 oz. Fresh orange juice and grapefruit juice

Recipe serving:
6 oz. Percolator punch
1 dash Angostura bitters
Garnish with orange wedges & cinnamon sticks

Farm Manager

We are eager to add a Farm Manager to the hands-on team developing its New York “farm to bottle” distillery and agri-tourism operation at Harvest Homestead Farm. Farming functions at Harvest Homestead Farm will cover two primary areas: 65-acres of field crops producing grain for spirits production and the development of a four-acre vegetable garden servicing the onsite farm café and area farmer’s markets. The farm manager will oversee the entire operation including:

  • Soil heath, preparation & amendments
  • Planning, planting, weeding, irrigation, harvesting & packing
  • Offsite sale of farm products at markets and events
  • Stewardship of organic process
  • Inventory and sales account management

The farm manager will be a key member of the Dutch’s Spirits team with the opportunity to build future programming including a farm share membership program, greenhouse for year-round production and interactive visitor activities.

Executive Chef / Chef Consultant

We are excited to add a consulting chef to the hands-on team developing its New York “farm to bottle” distillery and agri-tourism operation at Harvest Homestead Farm. Food and beverage activity will be centered on The Bunkhouse, a 70-seat full-service contemporary speakeasy café/bar/lounge projected to open later this year. The Chef Consultant will play a critical role in developing both a culinary identity and an authentic guest experience for the operation through leadership or supervision of the following core items: Grand Opening, Menu and Recipe Development, Daily Operations, and Marketing.
